Paskha mold (pasochnitsa) is designed to make a ritual Easter dish - cheese Paskha.
Paskha consists of a combination of sweetened cottage cheese, nuts (usually almonds) and candied fruits. This cheese mixture is molded into the shape of a four-sided pyramid in a special mold. The Paskha is decorated with nuts or candies to form the letters XB, which stands for "Christ is risen" (Hristos Voskres). Paskha is traditonally served with Kulich bread.
Cooking instructions: Line a pyramidal paskha mold with a fine cheesecloth wrung out of cold water. Add the mixture into the mold and fold the cheesecloth to cover the bottom of the cake. Pack the cheese down well and allow it to drip for 24 hours. Unmold the paskha and decorate it as you wish with Easter symbols.
